Perfect Pot Roast Recipe: Pot roast is a standard comfort food that is great for getting together with family and friends. This hearty dish is made with tender, flavorful meat that is slow-cooked with veggies to make a delicious one-pot meal. Here is a recipe for a delicious pot roast, along with some cooking tips and nutrition facts.

Ingredients

  • 3-4 lbs beef chuck roast
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, cut into chunks
  • 4 potatoes, quartered
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2-3 sprigs fresh thyme
  • 2-3 sprigs fresh rosemary
  • Bay leaf

Instructions

Get the meat ready. First, use paper towels to dry the beef chuck roast. This makes the sear turn out well. Add a lot of salt and pepper to the meat.

Put the roast on a grill. Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat. When it’s hot, add the roast and cook all sides for three to four minutes, or until they are browned. This step gives the dish more depth of taste.

Sauté the Herbs: Take the roast out of the pot and set it away. Chop the onion and put it in the same pot. Sauté for three to five minutes, until the onion gets soft. Add the minced garlic and cook for one more minute, until the garlic smells good.

When you’re done, pour red wine into the pot to deglaze it and scrape the bottom to get rid of any brown bits. This makes the sauce taste better. Allow the wine to bubble for two to three minutes.

Add the Rest of the Ingredients: Put the roast back in the pot. Beef broth, tomato paste, thyme, rosemary, and bay leaf should all be added at this point. The liquid should come up to about half of the roast. Bring to a low boil.

Cover the pot and turn down the heat to low to slow cook. It should be cooked for three to four hours, or until the meat is very soft. You can also put the pot in an oven that has already been set to 325°F (163°C) for the same amount of time.

To serve, take the roast and veggies out of the pot after they are done cooking. After 10 minutes, cut the roast into pieces. Spoon the tasty sauce over the pot roast and veggies when you serve it.

Tips for Recipe

Select the Correct Cut: A chuck roast is perfect for pot roast because its marbling makes it soft and tasty when cooked slowly.

Sear for Flavor: Don’t skip this step; it gives the dish more flavor and makes it better all around.

Let It Rest: Letting the roast rest before cutting it helps the juices stay in, which makes each bite more delicious.

Change the Seasoning: Before serving, taste the sauce and add salt and pepper as needed to make it taste better.
