Ingredients

  • 2 tablespoons olive oil
  • 3 skinless boneless chicken breasts, diced
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon chili powder
  • 1 jalapeno, seeded and diced
  • 2 peaches – peeled, pitted, and diced
  • 1/2 cup peach preserves
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon cornstarch
  • cilantro, fresh or dried, for garnish (optional)

Directions

It takes around two minutes for olive oil to become hot when it is heated in a big skillet over medium heat. Put some salt, pepper, smoked paprika, onion powder, garlic powder, and chili powder on the chicken, and season it with them.

Chicken breast should be added to the heated skillet and cooked for approximately five minutes, or until the core of the chicken is no longer pink and the juices flow clear. Set the chicken aside after removing it to a bowl.

The peaches and jalapeño should be added to the same skillet and cooked until the peaches become mushy, which should take approximately 5 to 6 minutes.

The peach preserves, soy sauce, apple cider vinegar, and cornstarch should be mixed together in a small basin using a whisk until they are thoroughly incorporated. Put aside for later.

Put the chicken that has been cooked back into the skillet, and then stir in the combination of peach preserves, making sure that the chicken and peaches are evenly coated.

You should keep whisking the sauce while it cooks for about two minutes, or until it thickens. At the time of serving, garnish with either fresh or dried cilantro.
