Authentic Mexican Chile Rellenos Recipe

Ingredients

  • 6 fresh Anaheim chile peppers
  • 1 (8 ounce) package queso asadero (white Mexican cheese), cut into 3/4-inch thick strips
  • 2 large eggs, separated
  • 1 teaspoon baking powder
  • ¾ cup all-purpose flour
  • 1 cup vegetable shortening for frying

Directions

In order to prepare the oven broiler, place the oven rack approximately six inches below the source of heat. Aluminium foil should be used to line a baking sheet.

After placing the peppers on the baking sheet that has been prepared, broil them for approximately ten minutes, or until the skins become blistered and blackened.

Peppers should be rotated frequently with tongs in order to sear both sides. After the peppers have been blackened, place them in a bowl and cover it securely with plastic wrap. As the peppers cool, allow them to steam for around fifteen minutes.

A meal from Mexico known as “chile relleno” literally translates to “stuffed chile.” Broiling a chilli pepper, such as a poblano or an Anaheim, followed by stuffing it with cheese and frying it until it is golden brown and crispy is the method of preparation.

It is possible to serve chilli rellenos on their own or with a tomato sauce on top. There is a maximum of three days that leftover fried chile rellenos can be stored in the refrigerator if they are stored in an airtight container. Put the items back into the oven on a baking sheet.
