Creamy Sausage Tortellini Soup Recipe

Ingredients

  • 1/2 pound hot Italian sausage
  • 3/4 cups sliced celery
  • 3/4 cup sliced carrots
  • 1/2 cup diced onion
  • 2 cloves garlic, pressed
  • 1 tablespoon all-purpose flour
  • 14 1/2 ounces chicken broth
  • 1 (14.5 ounce) can basil, garlic, and oregano diced tomatoes, undrained
  • 1/2 teaspoon Italian seasoning
  • 1 (8.8 ounce) package cheese tortellini
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup shredded mozzarella cheese
  • salt and freshly ground black pepper to taste

Instruction

Take a Dutch oven and place the sausage, celery, carrots, and onions inside of it. Place the Dutch oven. Sausages should be browned and vegetables should be soft after seven to nine minutes of cooking and stirring.

After about a minute, add the garlic and continue to sauté it until it becomes fragrant. Add the flour and stir until it is completely mixed. The chicken stock should be poured in while scraping the bottom of the pot to remove any browned bits.

For one minute, cook food. Then, bring the mixture to a boil while adding diced tomatoes and Italian seasoning. Cut the heat down, add the tortellini, and let it simmer for five minutes.

After adding the cream, continue to boil and stir for another five minutes. Mix in the spinach after adding the mozzarella cheese and stirring it until it melts. Use pepper and salt to season the food.

Storing Creamy Sausage Tortellini Soup

You can make this Italian sausage tortellini soup ahead of time and even freeze it. The tastes keep coming together and getting better as the soup sits in a ziplock bag or other airtight container. Reheating it is very simple, and it’s the best meal for cold winter days.

In the Refrigerator: In the fridge, make the creamy pork tortellini soup. If you’re not serving it, don’t add the tortellini pasta when you cook it. After it has cooled down fully, put it in a ziplock bag or another airtight container. You can keep it in the fridge for three to four days.

Reheating: You can thaw your sausage tortellini soup overnight in the fridge, or you can just put the ziplock bag in a bowl of hot water. Just put the soup in a pan or slow cooker after it has thawed or been taken out of the fridge. Adding the pasta back in now would be great if you forgot to do so. Let it cook for a few minutes before serving.
