Skillet Shrimp Fajitas with Cilantro-Lime Cream Recipe: This dish for savoury and quick dinner blends luscious shrimp with vibrant bell peppers and a zesty cilantro-lime cream. Here’s how to make it, with dietary facts and helpful hints.

For the Fajitas

  • 1 lb (450g) shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Tortillas (whole wheat or corn)

For the Cilantro-Lime Cream

  • 1/2 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste

Instructions

Combine Greek yoghurt, mayonnaise, chopped cilantro, lime juice, and a little amount of salt in a bowl. Taste and adjust the seasoning. Store in the fridge. Heat the olive oil in a big skillet over medium-high heat.

Add the bell peppers and onion slices, and sauté for about five minutes, or until they start to soften.
Add the minced garlic and stir constantly for a further minute.

Over the vegetables, add paprika, cumin, chilli powder, salt, and pepper. Mix thoroughly to blend.
When the shrimp are pink and opaque,

Add them to the skillet and simmer for 3–4 minutes. Mix the shrimp and veggies together by squeezing lime juice over them.

Use a microwave or a dry skillet to reheat the tortillas. Top each tortilla with a dollop of cilantro-lime cream after adding the shrimp and veggie mixture. Have fun!

Pick your shrimp: You can use frozen or fresh shrimp. To improve cooking, make sure they are thawed and wiped dry if using frozen.
